Pilot Program Offers Salad Bar to Students at Chicago Public Elementary Schools

A March 21, 2006 article from the Chicago Sun-Times reports that the Chicago Board of Education has launched a pilot program aimed at improving nutrition for elementary students attending public schools in Chicago. As part of the program, salad bars are offered in some elementary school cafeterias. While salad bars currently appear in about half of all high schools across the country, they are found at less than 25% of elementary schools. More students tend to eat from the salad bar after they have attended nutrition sessions.
