College Dining Hall Options Geared to Health-Conscious Students

According to a July 24, 2009 USA Today article, colleges across the country are revising food service options in order to accommodate students who are increasingly concerned with their health, as well as the sustainability of food that they eat. Many students have small refrigerators and microwaves in their residence halls, allowing them to cook their own meals. Some colleges offer students the option of picking up groceries, rather than a cooked meal, from the campus cafeteria. Organic items are appearing on many campus menus, and some colleges are using dining hall waste as compost material for vegetable gardens.
