A November 25, 2007 USA Today article reports that, according to a recent study conducted by the University of Minnesota, students will eat healthy food when it is served at school. The study is based on 5 years of data for over 300 Minnesota public school districts. The data also shows that, with properly trained staff and the right equipment, serving healthier foods is not necessarily more expensive for schools.
