Schools Try Various Ways to Get Students to Eat Nutritious Food
5/4/2007

A May 1, 2007 USA Today article reports that schools across the nation are trying different approaches to get students to eat healthy food. Some schools have gone so far as to serve "faux-junk food," which looks like the junk food students are used to eating (donuts, pizza, etc.) but is fortified with vitamins and healthier ingredients. However, nutrition experts fear that students who eat the faux-junk food as children will have a difficult time transitioning to a healthy diet as adults. One alternative to faux-junk food is blending vegetables (such as broccoli and cauliflower) into a food children will eat (such as pasta sauce).

The article is available at the USA Today Web site.
