An April 25, 2007 article from The Associated Press reports that, at the request of Congress, the Institute of Medicine has recommended a set of standards that would apply to foods that are available to purchase in schools. The standards are presented as a two-tier system, and promote fruits, vegetables and whole grains. Sugars, salt and saturated fats are among the list of things to be avoided. The recommendations will be considered by Congress, and also made available to state and local school boards and administrators. School policies and/or federal, state or local laws would be needed to implement the recommended standards. The article includes a link to the Institute of Medicine's list of recommended foods.
